I’m doing a bit of a different type of post this week: a recipe post! I love food and will always incorporate it into anything I do. 🙂

This homestyle chicken noodle soup receipe is from my husband and, honestly, it changes based on what we have in the house. What I’ve included below is a good base to start with and you can add or take out vegetables, change the spices, etc.

Homestyle Chicken Noodle Soup

This soup is delicious, simple and quick to make. It’s mostly healthy too!

  • 2 chicken breasts
  • 3 cups chicken broth
  • 2 medium carrots
  • 3-4 stalks celery
  • 1 medium onion
  • 2-3 cloves garlic
  • 1 tbsp italian seasoning
  • 1 tbsp olive oil
  • salt & pepper to taste
  • 1 cup Chickpea Rotini
  1. Cut chicken into bite-sized chunks and cook with salt and pepper 

  2. Dice up carrots, celery, onion and garlic

  3. Once chicken is almost done, add vegetables and cook 3-5 minutes

  4. Add chicken broth and spices

  5. Add noodles

  6. Simmer approximately 10 minutes

I strongly suggest using chickpea noodles as it adds amazing flavour and makes the soup more robust. You can certainly use whatever noodles you prefer.

To make this vegan/vegetarian, use vegetable broth and don’t add the chicken. Add chick peas and/or beans to replace the protein. It’s super delicious too.

I love how customizable soups can be and this one is for sure. Other things you could add in are:

  • potatoes
  • yams
  • parsnips
  • peppers
  • cabbage
  • peas
  • green beans
  • corn
  • tomatoes
  • beans
  • chickpeas
  • rice
  • lentils
  • and the list goes on…

Really whatever vegetables you like that would hold up in liquid are going to work. Cucumbers are probably a bad option. Don’t use cucumbers.

You can also change up the spices; you could use pretty much anything you want. I haven’t tried it, but I feel something like nutmeg would be good in there too, but without the Italian. Just be careful, you don’t want to overspice it!
